Start of with mixing the raisins with balsamic vinegar with water and
juice in a little bowl.
If you don’t have the juices then you could use another tablespoon of
water and a pinch of sugar instead. Rinse your rice with cold water
and cook as usual.
Cut the mushrooms to quarters and stir fry them adding salt & pepper
Roast the sesame until golden brown in the meanwhile you can mince the
onion. Stir fry the onions till they look glossy. Cut the salmon to
bite sized pieces and add them to the onions. Cut the red pepper to ½
cm pieces and add them to the salmon. Stir fry for about 1 minute then
add the vinegar/raisin mixture and keep cooking till the moisture is
almost gone. Season the rice and fish with salt and pepper as you like
and let it cool. Cut thin cucumber slices and cut of a little bit at
the bottom. Cut the plum to quarters. Arrange everything nicely in the
box using the cucumber and salad leave as food separators.
If you want just the sweet seasoned salmon then skip the parts you
don’t need, with some preparation beforehand everything can be done
under 10 minutes.
